1/5 tsp ground cinnamon
1 1/2 tsp ground coriander
1 1/2 tsp ground chilli
1 1/2 tsp ground ginger
1 1/2 tsp salt
1 1/2 tsp coarsely ground black pepper
About 600g boneless, skinless chicken breast
3 tbsp olive oil
1. Heat oven to 175˚C.
2. Mix together the spices together. Rub the chicken fillets with spice rub. Brown the chicken in the olive oil and then transfer to an ovenproof dish. Bake in the centre of the oven for 20–25 minutes or until the internal temperature of the chicken is 72˚C.
3. Let the chicken rest for about 5 minutes before slicing.
